2 toasted Nori seaweed
Peanut oil (for frying)
500 grams Soba Noodles
4 tsps Wasabi paste
250 milliliters soy sauce
2 centimeters ginger
1 handful Thai basil
2 Tbsps sesame oil
2 Tbsps Rice wine

Preparation steps

Cut the nori into 1 cm (approximately 1/3 inch) wide strips and fry in a hot wok or frying pan in hot oil until crispy. Drain on paper towels.

Cook the soba noodles according to package instructions.

For the sauce: Distribute the wasabi between sauce bowls. Set 2-3 tablespoons soy sauce aside then pour the remaining over the wasabi. Peel the ginger and cut into thin slices. Rinse the Thai basil, shake dry, pluck the leaves and chop coarsely. Add the ginger and basil to the sauce.

Mix the sesame oil mix with the rice wine and 2-3 tablespoons soy sauce and toss with the drained noodles. Divide between serving bowls, garnish with nori and serve with the sauce.
