Japanese soba noodles are made from buckwheat - they therefore contain more protein than other noodles and also have a positive effect on blood sugar levels. With the vitamin-rich Mairübchen and the egg, you get an all-round tasty, wholesome meal.
The delicious Mairübchen are mainly in season in May and June - then you should take them immediately. If you like, you can also use the lower part of the thick stems. Kohlrabi is a good alternative.

- 1 lb Turnip
- 1 red onion
- 4 sprigs Sage
- 1 egg
- 5 ozs Soba Noodles
- salt
- 2 Tbsps Canola oil
- peppers

Preparation steps
Peel, halve and slice turnips into thin strips. Peel onion and cut into thin strips.
Rinse sage, shake dry and pluck the leaves. Set some leaves aside and cut the rest into small strips.
Pierce egg, place in boiling water and hard-boil for 8 minutes.
Meanwhile, cook soba noodles according to package directions in plenty of boiling salted water until al dente.
While the pasta is cooking, heat the oil in a large non-stick pan. Add onion strips and sauté over medium heat for 2 minutes. Add sage strips and turnips and cook over medium heat for 5 minutes. Season with salt and pepper.
Shock egg in cold water, peel and chop.
Drain the pasta, add to vegetables, mix well and cook briefly.
Serve turnips and soba noodles sprinkled with chopped egg and garnished with sage leaves.
