2 Tbsps olive oil
8 eggs
3 ozs grated Cheese (such as Manchego)
3 Tbsps Whipped cream
2 Tbsps freshly chopped parsley

Preparation steps

1.

Trim the leeks, rinse and cut into approximately 1/4 inch thick rings. Dice the bacon and sweat with the leeks and oil in a large skillet for 4-5 minutes.

Whisk the eggs, cheese, cream and parsley together and season with salt and pepper. Pour over the leek mixture and cook for 3-4 minutes, until golden brown. Using the pan lid or a large dish, flip the tortilla out of the frying pan and slide back into the pan. Cook until golden brown on the second side, around 3-4 minutes. Slide from the pan and serve cut into pieces.
