2 Tbsps butter
1 Tbsp Pastry flour
¾ l Beef broth (homemade or prepared)
200 grams Whipped cream
salt
freshly ground peppers
2 tsps lemon juice

Preparation steps

Rinse lettuce and separate into individual leaves. Blanch lettuce leaves in salted boiling water, about 3 minutes. Rinse with cold water, drain well and cut into thin strips. Peel and finely chop onion. In a pan, cook onion in butter until translucent. Sprinkle with flour and cook until flour darkens slightly.

Stir in broth and cream and simmer, stirring occasionally, about 10 minutes. Set aside about 4 tablespoons lettuce strips. Add remaining lettuce to soup and puree until smooth. Season with salt, pepper and lemon juice. Continue simmering about 5 minutes more. Divide the soup among bowls and garnish with remaining lettuce strips.
