Preparation steps

1.

Remove the stems from the artichokes, and remove the lower leaves. Snip the hard tips of the leaves, and quarter the artichokes lengthwise. 

2.

Bring a pot of salted water to the boil. Add the lemon juice and the artichokes, and cook for 20 minutes. Remove the artichokes from the water and drain thoroughly.

3.

Mix the oil, vinegar, and thyme. Season to taste with salt and pepper. Add the artichokes, toss to coat, and set aside to marinate briefly. Serve the artichokes with a fresh baguette, if you'd like.
