Preparation steps

1.

Rinse spareribs, pat dry and cook gently in boiling salted water for about 30 minutes.

2.

Peel and dice onion and garlic. Heat 1 tablespoon of olive oil in a pan and saute onion and garlic for a few minutes. Add remaining olive oil, sherry, ketchup, honey and soy sauce and season with salt, pepper and chili powder. Simmer for 3 minutes.

3.

Pat dry spareribs and cut into portions. Coat ribs with about half of the barbecue sauce. Line baking sheet with aluminum foil. Arrange ribs on it and grill on a hot grill for about 15-20 minutes, turning once. Arrange ribs on plates and serve accompanied by remaining barbecue sauce.
