Preparation steps

Mix all the ingredients of the marinade, brush the salmon steaks on both sides and let stand for about 10 minutes. Preheat the oven to 80°C (approximately 175°F) and put in a plate to warm. Heat frying pan or grill skillet. Season the salmon steaks with salt and cook on each side over medium heat for about 2 minutes. Place on the preheated plate in the oven and leave until done, about 20 minutes.

For the golden millet, melt butter in a pan, add the shallots and sauté. Add the golden millet, cook briefly and deglaze with orange juice. Add vegetable broth, star anise and peperoncinos and simmer for 15 minutes. Stir occasionally. Fillet the remaining oranges and mix segments and zest with the golden millet. Place the salmon steaks on the golden millet, garnish with purslane, drizzle with a little olive oil and serve immediately.
