1 organic lemon (juiced and zest grated)
150 grams coarse Sea salt
75 grams sugar
1 fresh Salmon from the middle, about 400 g (approximately 14 ounces) with bones removed
1 tsp Szechuan pepper
2 tsps black peppercorns
2 organic Oganic oranges (sliced)
As Desired for the garnish

Preparation steps

1.

Mix together lemon zest, sea salt and sugar. Remove about 1/3 and pour into a flat dish, about 20 x 25 cm (approximately 8 x 10 inches). Place salmon skin side down in dish. Cover with remaining mixture and peppercorns.

Place orange slices on top and drizzle with lemon juice. Cover salmon with foil and weigh down with a chopping board. Marinate in refrigerator for 1-2 days. Turn fish every 8 hours.

3.

To serve, remove salmon from marinade and discard orange slices and salt mixture. If desired, serve with orange slices and sprinkled with peppercorns.
