- 300 grams fresh Spinach (or lettuce)
- 4 Tbsps Pine nuts
- 500 grams Smoked salmon (sliced)
- 4 Tbsps Lime juice
- 1 tsp sugar
- 1 generous pinch Vanilla salt
- freshly ground peppers
- 2 Tbsps soybean oil
- 2 tsps pickled peppercorns
Preparation steps

Pick through the spinach, rinse and drain well. Toast the pine nuts in a nonstick frying pan until golden brown, remove and let cool. Cut the salmon into bite-sized strips.

For the vinaigrette, stir the lime juice and oil with the sugar, salt and pepper to taste. Toss half with the spinach and arrange on plates. Mix the peppercorns into the remaining half. Arrange the salmon slices on the plates and sprinkle with the pepper vinaigrette. Serve sprinkled with pine nuts.
