Preparation steps

Peel and halve the cucumber lengthwise. Scrape out the seeds with a spoon and dice into bite-sized pieces. Rinse and dry the tomatoes. Thinly slice the vine-ripened tomatoes, and quarter the cherry tomatoes. Quarter the green tomatoes, remove the seeds, and dice. Peel and finely chop the shallots and garlic.

For the marinade, mix the vinegar, lemon juice, sugar, and mustard. Gradually incorporate the oil, then season to taste with salt and pepper. Mix the cucumber and tomatoes, then mix in the marinade. Add the basil, and stir to combine. Transfer into smll glasses, garnish with the basil, and serve.
