800 grams starchy potatoes
300 milliliters milk
5 Tbsps olive oil
60 grams black Olives (pitted)
4 Tbsps Tapenade (jarred)
1 bunch Basil
Sea salt

Preparation steps

1.

Rinse the potatoes, and cook in boiling salted water for 25 minutes until soft.

Slice the olives.

Remove the leaves of the basil, and roughly chop half of them.

4.

Peel the potatoes, then press through a ricer. Let dry slightly, then mix in the hot milk and the oil. Mix in the basil and olives, and season to taste with sea salt. Transfer to a warm plates, and garnish with the tapenade and remaining basil leaves.
