For the meat patties
400 grams mixed ground meat
1 day-old White roll
1 small onion
1 garlic clove
1 egg
breadcrumbs (as needed)
salt
peppers
½ tsp ground paprika
1 pinch Nutmeg
2 Tbsps clarified butter (to saute)
also
2 Tbsps green, pickled peppercorns
4 Tomatoes
50 milliliters Beef broth
4 eggs
1 Tbsp vegetable oil
4 sprigs curly parsley
salt
peppers

Preparation steps

For the meat patties: Soak the bread in warm water. Peel and finely chop the onion and garlic. Heat 1 tablespoon butter in a skillet and saute the onion and garlic until translucent. Add the parsley and set aside.

Place the ground meat in a bowl along with the egg. Squeeze the bread well and add to the meat along with the onion-garlic-parsley mixture, season with salt and pepper.

Knead until combined. If the mixture is too soft to shape, add the breadcrumbs. With dampened hands, form the mixture into 4 patties. Heat the clarified butter in a skillet and saute the patties 3-5 minutes per side over medium heat.

Rinse the tomatoes and place in a small saucepan with the broth, cover and simmer over medium heat for about 5 minutes.

In another pan, heat the oil and fry the eggs, season with salt and pepper. Lift the eggs from the pan and place on the meat patties. Heat the peppercorns n the pan the eggs cooked in until heated through and sprinkle over the meat. Carefully remove the tomatoes from the pot and place on the patties. Serve garnished with parsley. Serve with ketchup if desired.
