1 Red Bell pepper
3 ozs green Snow peas
7 ozs soft Feta
3 ozs black Olives
salt

1 garlic clove
juiced lemons
4 Tbsps olive oil

Preparation steps

1.

Cook couscous according to package instructions. Rinse and halve bell pepper, remove seeds and ribs, dice. Rinse snow peas and blanch in boiling salted water for 4 minutes. Drain and rinse in cold water, drain again, halve. Peel garlic and chop finely.

Whisk oil with lemon juice and garlic, season with salt and pepper. Combine couscous, pepper, olives and snow peas, toss with the dressing and season to taste. Place salad into bowls and sprinkle with crumbled feta. Serve.
