Nutritional values
The many omega-3 fatty acids from salmon improve concentration and memory and protect against vasoconstriction and high cholesterol levels, while the proteins from the fish support muscle building and maintenance. The salad also provides plenty of nutrients and vitamins.
Serve this salad with a baguette or some rice for more satiating carbs.

Preparation steps
Rinse the lettuce, tear into bite-sized pieces and spin dry.
Rinse the orange in hot water and wipe dry. Cut half of the orange into slices and squeeze the juice of the other half.
Mix the orange juice with the mustard, season with salt and pepper and gradually drizzle in the olive oil and stir into a vinaigrette.
Serve the salad each with an orange slice, place a slice of smoked salmon on top and drizzle with the vinaigrette.
