75 milliliters fish stock
freshly ground peppers
50 grams finely ground Pistachio
4 pcs Monkfish (each about 160 grams, ready to cook, skinless)
1 fresh lemon (juiced)
salt
12 slices Bacon
6 Tbsps Pistachio oil

Preparation steps

Peel one apple, core and dice. Heat fish stock in a saucepan and cook apple cubes for about 3 minutes. Season with pepper and add 1 tablespoon of ground pistachios.

Rinse monkfish, pat dry and drizzle with lemon juice, season with salt and pepper. Arrange fish fillets in a baking dish and top with bacon slices and apple and pistachio mixture. Roll up and secure with a kitchen string. Sprinkle with 4 tablespoons of pistachio oil and bake in preheated oven at 180°C (approximately 350°F) for about 15-20 minutes.

Rinse remaining two apples and core. Cut apples into thin slices. Combine remaining pistachios and the rest of pistachio oil with breadcrumbs. Spread monkfish fillets with apple slices and sprinkle with pistachio crumbs. Roast under a broiler for 4-5 minutes, watching carefully. Arrange fish fillets on warmed plates and drizzle with some pistachio oil. Serve.
