Wholemeal flour and nuts make the wafers a nourishment for the nerves, because they contain a lot of B vitamins. Orange juice strengthens the immune system with plenty of vitamin C. If you want to save calories, replace the nuts with grated carrots.
Instead of orange juice, apple or passion fruit juice is also delicious. Buttermilk makes the wafers finely sour and particularly loose; a spoonful of curd cheese also fits.

- ½ Orange (about 100 grams)
- 2 Tbsps Margarine (about 50 grams)
- 1 Tbsp honey
- ½ pinch Vanilla sugar
- 1 egg
- 3 Tbsps Whole wheat flour (about 45 grams)
- 3 Tbsps ground Hazelnuts (about 30 grams)
- 1 pinch Baking powder
- ½ Tbsp vegetable oil (eg, canola oil)
- powdered sugar (to taste)

Preparation steps
Squeeze half orange and measure 75 ml (approximately 1/3 cup) juice.
Beat margarine with honey and vanilla sugar in a bowl with a hand mixer until creamy.
Separate egg. Stir egg yolk into margarine and honey mixture.
Mix flour, hazelnuts and baking powder in a small bowl. Add flour and nut mixture to egg yolk mixture and stir well. Gradually add orange juice to create a viscous batter.
Put egg white in a high vessel and beat with hand mixer until stiff. Gently fold egg white into batter with a whisk.
Preheat waffle iron and grease baking surfaces with a little oil. Add 2 tablespoons of batter into center of waffle iron, close lid and cook until waffle is golden brown, about 4 minutes. Remove waffle and bake three more waffles from remaining batter. Sprinkle with powdered sugar and serve.
