Preparation steps

Bring the water and 2 teaspoons of salt to a boil. Slowly add the maize flour until it forms a pyramid in the middle of the saucepan (do not stir). Close the lid and simmer for about 1 hour over a low heat.

Now stir using a wooden spoon and pour in the cold water. Simmer gently for a further 1 hour, stirring occasionally.
