- 4 Tbsps olive oil
- 6 Chicken breasts (cut into strips)
- 2 onions (finely chopped)
- ⅞ cup white wine
- ⅞ cup Crème fraiche
- ½ cup ground almonds
- 1 tsp Coriander
- ¼ cup Pine nuts
- Chives (finely chopped)
- salt

Preparation steps
1.
Heat the oil in frying pan. Fry the onions and chicken until browned.

When they are well-coloured, season with salt and pepper, lower heat and cook for 20 minutes, turning occasionally. Remove chicken from the pan and keep warm.

Add the white wine to the pan and scrape the bottom with a spatula to release the fond. Bring to the boil and reduce by half. Add the crème fraiche, the ground almonds, coriander seeds, pine nuts and chopped chives. Season with salt and pepper to taste.

Return chicken to the pan and cook for a further 2-3 minutes.

Serve with fresh tagliatelle and a dry white wine. Garnish with chives.
