¾ cup Tomato paste
1 large yellow onion (peeled and chopped)
1 green Bell pepper (rinsed; seeded and chopped)
1 red Bell pepper (rinsed; seeded and chopped)
2 green chili peppers (rinsed; seeded and chopped)
1 cup Beef broth
¼ cup Chili powder
3 cloves garlic cloves (peeled and minced)
1 Tbsp Worcestershire sauce
1 Tbsp dried oregano
2 tsps ground Cumin
2 tsps Hot Pepper Sauce
1 tsp dried Basil
1 tsp salt
1 tsp ground Black pepper
1 tsp cayenne pepper
1 tsp paprika
1 tsp granulated sugar
fresh oregano (to garnish)

The longer the chili simmers, the better it is. Refrigerate any leftovers in an airtight container, use within 2 to 3 days. Freezes well.

Preparation steps

Heat a large pot over medium-high heat. Crumble the ground beef into the hot pan, and cook, stirring frequently, until the beef is browned. Drain any excess grease.

Add chili beans, spicy chili beans, diced tomatoes, tomato paste, onions, peppers, chili peppers and beef broth. Season with chili powder, garlic, Worcestershire sauce, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika and sugar. Stir to incorporate, cover, reduce heat and simmer for at least 2 hours, stirring occasionally.

Taste, adjust seasoning if necessary. Remove from heat and divide between bowls. Serve garnished with fresh oregano and tortilla chips, if desired.
