2 Tbsps honey
750 milliliters Beef stock

Preparation steps

Peel onion and garlic. Dice garlic finely and cut onions into slices. Peel carrots and cut into sticks. Rinse meat and pat dry.

Brown the meat on all sides in hot oil in a pot or roasting pan. Mix in vegetables and brown lightly. Blend in honey and add beef stock to cover. Season with salt and pepper. Simmer, half covered, for about 1.5 hours. Stir occasionally and add beef stock as needed. Add thyme during the last 15 minutes of cooking time.

Season stew with Balsamic vinegar and serve.
