Preparation steps

1.

Rinse fennel (set aside some fennel leaves), trim and finely chop.

2.

Peel oranges like an apple, taking care to remove thick white skin. Then cut into slices. 

3.

Mix mayonnaise in a bowl with yogurt, marmalade and lime juice and season with salt and cayenne pepper. Arrange fennel on plates, cover with orange slices and drizzle with yogurt mixture. Serve garnished with reserved fennel leaves and watercress.
