2 Oganic oranges (juice)
3 Tbsps Lime juice
1 garlic clove
2 tsps finely grated ginger
2 Tbsps olive oil
½ tsp ground Cumin
salt
1 tsp cane sugar

1 ripe Mango
3 Tbsps white Rum
1 white onion
12 large shrimp (peeled and deveined)

Preparation steps

1.

For the orange glaze: Peel and finely chop the garlic and shallot.

Combine the orange juice, lime juice, garlic, ginger, olive oil and cumin in a saucepan. Season with salt to taste. Add the sugar and season with cayenne to taste. Bring to a boil and simmer for 5 minutes.

For the mango sauce: Peel the mango and cut into thick pieces. Puree half the mango pulp with the rum. Place in a saucepan and gently heat until warm.

For the skewers: Cut the remaining mango into 12 cubes. Peel the white onion and cut lengthwise into 6 wedges.

4.

Alternately thread the mango cubes, shrimp and onion wedges onto the wooden skewers. Cook on a hot grill until the shrimp are pink and no longer translucent, about 3 minutes per side.

5.

At the end of cooking, brush the skewers with the orange glaze and cook until lightly caramelized. Serve the skewers with the mango sauce.
