1 shallot
1 Tbsp White vinegar
1 tsp balsamic vinegar
½ tsp Mustard
6 Tbsps vegetable oil

Preparation steps

1.

From the orange, peel a piece of shell thin and cut the peel into very thin strips. Peel shallot and cut into small cubes.

2.

Sweat shallots in 1 tablespoon oil. Add orange strips and sauté briefly, remove from heat and let cool.

3.

Squeeze orange. Mix orange juice with the vinegar and mustard, then season with salt and pepper. Whisk in the rest of the oil. Season to taste and whisk in the orange strips and shallot cubes.
