- 400 grams Parsnips
- salt
- 2 Apple
- 200 grams Grape
- 150 grams Yogurt (0.1% fat)
- 1 tsp honey
- 1 Tbsp lemon juice
- 1 Tbsp apple cider vinegar
- cracked peppers
- 2 Tbsps chopped Walnut
- freshly chopped parsley
Preparation steps

Peel the parsnip and cut into thin sticks. In a saucepan, add a little water and salt, cover parsnips for 3-4 minutes until al dente or until tender.
Drain and let cool. Rinse the apples, quarter and core the center, also cutting into sticks. Rinse the grapes, remove seeds and cut into slices.

Toss the parsnip, apple, and grapes together.
For the vinaigrette, mix the yogurt with the honey, lemon juice and apple cider vinegar, seasoning with salt and pepper to taste.
Drizzle vinaigrette over the salad and sprinkle with chopped walnuts and parsley.
