400 grams Spaghettini
250 grams Salmon (skinned)
200 grams Leeks (The white and light green)
1 lemon (Juice and zest)
6 Tbsps white wine
5 Tbsps olive oil
salt
freshly ground peppers
Basil
15 Cherry tomatoes

Preparation steps

1.

Cut the salmon into bite-sized strips and marinate with lemon juice and lemon peel. Trim the leeks, rinse and cut diagonally into thin rings.

Blanch cherry tomatoes for a few seconds, rinse in cold water, peel, quarter and remove seeds.

3.

Sauté leeks in hot oil briefly. Pour in the white wine, season with salt and pepper, cover and cook 3 minutes. Add cherry tomatoes and salmon and cook 3-4 minutes until done. Season to taste and stir in the coarsely chopped basil.

4.

Meanwhile cook pasta in plenty of boiling salted water until al dente.

5.

To serve, drain noodles and serve with the salmon and leek sauce on warmed plates.
