- 1 stalk Leeks
- 1 sprig rosemary
- 1 garlic clove
- 1 Sausage (about 6 oz., casing removed)
- 1 tsp olive oil
- 1 tsp Tomato paste
- 3 ozs dry white wine (or broth)
- 3 ozs Broth
- salt
- peppers
- cayenne pepper
- For serving
- 12 ozs Pasta (such as rigatoni)

Preparation steps
Halve leek lengthwise, rinse well and drain, then finely chop.
Rinse rosemary, shake dry, pluck off the needles and finely chop. Peel the garlic clove.
Divide sausage into small pieces in a bowl. Shape into small dumplings with moistened hands.
Heat oil in a shallow pot and sauté sausage meatballs on a low heat until completely brown, for about 5 minutes.
Add leek and rosemary and cook briefly.
Squeeze garlic through a garlic press into mixture. Stir in tomato paste and cook for 1 more minute.
Pour in wine and broth, bring to a boil and simmer, covered, over medium heat for 15 minutes. Season with salt, pepper and cayenne pepper. Serve with pasta.
