200 grams Ricotta cheese
150 grams Whipped cream

Preparation steps

1.

Rinse arugula, trim and chop about 2/3 of it. Pluck the rest into bite-sized pieces.

2.

Cook penne in boiling salted water according to package directions until al dente.

3.

Cut the salmon into strips and sprinkle with orange juice.

4.

Melt ricotta with cream over low heat and season with salt, pepper, nutmeg and orange juice. Stir in chopped arugula and salmon.

5.

Arrange penne with the sauce on plates and serve garnished with the remaining arugula.
