1 small Kohlrabi (200 g or .5 pound)
1 pc Celery root (100 g or .25 pound)
2 sticks Celery
1 shallot
2 garlic cloves
1 Tbsp olive oil
500 grams diced Tomatoes

350 grams Spaghetti
2 stalks parsley
2 stalks Basil

Preparation steps

1.

Peel and finely chop carrots, kohlrabi and celery root. Rinse celery and cut into small cubes.

Peel shallot and garlic and finely chop. Heat oil in a pan. Saute shallot and garlic until soft over medium heat. Add chopped vegetables and cook briefly. Add tomatoes, season with salt and pepper and simmer for 10 minutes.

Meanwhile, cook spaghetti in boiling salted water according to package directions until al dente.

Rinse parsley and basil, shake dry, pluck leaves, chop finely and stir into the vegetable sauce.

5.

Drain pasta. Mix pasta with vegetable sauce and arrange on warmed plates. Serve immediately.
