500 grams Penne
1 Zucchini
4 Tomatoes
50 grams pecorino romano (freshly grated)
1 bunch Basil
4 Tbsps White vinegar
100 milliliters Vegetable broth
3 Tbsps olive oil
1 garlic clove (finely chopped)
Sea salt
freshly ground peppers

Preparation steps

1.

Cook pasta in boiling salted water until al dente.  

2.

Rinse and trim zucchini, halve lengthwise and slice thinly.

3.

Blanch tomatoes in hot water for a few seconds, rinse in cold water and peel, halve and remove seeds and dice into small cubes.

4.

Rinse and shake dry basil, pluck off leaves. 

5.

Heat oil in a pan and saute zucchini and garlic for a few minutes, add tomatoes and saute briefly.  Deglaze pan with vinegar and broth. Remove from heat, season with salt and pepper. 

6.

Drian pasta and arrange on plates, spread with vegetable sauce. 

7.

Serve garnished with basil and sprinkled with pecorino.
