400 grams frozen Peas
1 shallot
1 Tbsp butter
600 milliliters vegetable stock
100 milliliters Whipped cream (minimum 30% fat)
salt
white peppers
1 pinch Nutmeg
1 Tbsp Lime juice
100 grams Snow peas
1 Tbsp toasted white Sesame seeds

Preparation steps

Thaw the peas. Peel and chop the shallot, sauté in butter, add three quarters of the peas and continue cooking. Add the vegetable stock and cream, season with salt, pepper, nutmeg and lime juice and simmer about 3 minutes, covered. Puree the pea mixture and press through a sieve if desired.

Trim the snow peas, rinse, drain and halve or leave whole depending on the size. Bring the pea soup to a boil, add the remaining peas and snow peas, gently simmer 1-2 minutes and transfer to bowls. Sprinkle with toasted sesame seeds and serve.
