1 Red Bell pepper
1 bunch scallions
½ bunch parsley
6 Tbsps olive oil
2 lemons (Juice)
salt

Cumin
1 garlic clove
1 Red onion

Preparation steps

1.

In a bowl, combine couscous with 200 ml (approximately 3/4 cup) of boiling water, cover and let sit for 10 minutes. Fluff with a fork.

Rinse, dry and halve the pepper, remove seeds and cut into small cubes. Rinse the parsley and drain. Peel the onion and cut into small cubes.

3.

In a large bowl, mix together the olive oil, lemon juice, salt, pepper and cumin. Peel the garlic, press through a garlic press and add. Mix in the couscous, peppers, parsley and chopped onions and serve.
