5 onions
10 bay leaves
1 organic lemon (sliced)
2 Tbsps Juniper berries
3 lemons (juiced)
peppers (coarsely ground)

1 Tbsp sugar
1 l water

Preparation steps

1.

Peel onions and cut into rings. Cut each mackerel into 4 pieces. Combine water with bay leaves, juniper berries, sugar, salt and plenty of pepper, bring to a boil.

2.

Add lemon juice, lemon slices and onion rings to the broth and set aside. Pour broth over fish and let marinate for 4-5 hours. Remove fish from the marinade and serve cold.
