200 grams Pine nuts
200 grams ground almonds
2 Tbsps cornstarch
200 grams sugar
1 tsp finely grated Lemon peel
2 egg whites
1 pinch salt

Preparation steps

Coarsely chop half of the pine nuts and combine with the ground almonds, cornstarch, sugar and lemon zest.

Beat the egg whites with a pinch of salt until stiff. Fold the pine nut mixture into the egg whites and spoon walnut-sized mounds onto a baking sheet lined with parchment paper. Lightly press 2-3 pine nuts onto each mound and bake in an oven preheated to 180°C (approximately 350°F) for 10 minutes, until golden brown. Remove from the oven and cool on a wire rack.
