Preparation steps

In the bowl of an electric mixer, beat the eggs and sugar until creamy. Beat in the almonds, lemon zest and cinnamon until the dough is firm.

Preheat the oven to 220°C (approximately 425°F). Line a baking sheet with parchment paper.
With dampened hands, shape the dough into walnut-size balls and place 2 inches apart on the baking sheet. Lightly beat the egg yolk, brush on the dough and gently press the pine nuts into the dough.
3.
Bake on the middle rack until lightly golden, about 10 minutes. Cool on a wire rack.
