Preparation steps

1.

Mix flour with 2 teaspoons salt, pile onto work suface and make a well in the center. Crumble yeast, sprinkle with sugar and mix with about 80 ml (approximately 2 3/4 ounces) warm water. Pour into well and let sit 20 minutes. Then with 2 tablespoons oil and 100 ml (approximately 3 1/3 ounces) of lukewarm water knead to a smooth dough. If needed add more lukewarm water. Cover dough and let sit for 1 hour in a warm place.

2.

After the rest period, knead dough again and shape on a lightly floured board into a long roll. Cut into 8 pieces about 4 cm (approximately 1 1/2 inches) thick and roll with a rolling pin into elongated rectangles. Brush rectangles with 2 tablespoons oil and season with salt and pepper. Place on a baking sheet lined with parchment paper and bake in preheated oven at 250°C (fan 220°C; gas: high level) (approximately 475°F) until golden brown for about 15 minutes.

3.

Meanwhile rinse basil, shake dry and finely chop 1 handful of leaves. Peel onions and cut into thin rings. Combine cream cheese, creme fraiche, salt, pepper, chopped basil and remaining olive oil together.

4.

Spread hot pizza bread with cheese mixture, sprinkle with onion rings and basil leaves and serve.
