1 cup Rice (scant)
1 onion (diced)
1 Tbsp butter
1 Orange (juiced)
½ cup vegetable stock
8 Apricot (peeled, pitted and diced)
18 ozs Pork (e. g. loin, sliced)
cup peas
2 Tbsps fresh parsley (chopped)

Preparation steps

1.
Cook the rice according to the directions on the packet.
2.
Fry the onion in hot butter and then quench with the orange juice and some of the stock. Stir in the apricots, season with salt and bring to the boil. Simmer for around 10 minutes until the mixture thickens, adding more stock if necessary.
3.
Add the meat and the peas to the apricot mixture and cook for around 5 minutes until done. Stir in the parsley and season to taste. Serve with the rice.
