- 2 carrots
- 2 onions
- 1 garlic clove
- 1 stalk Celery
- 4 slices Pork cutlet (with rind, of approx 220 g)
- salt
- freshly ground peppers
- 1 Tbsp Caraway
- 2 Tbsps clarified butter
- 400 milliliters Dark beer
- 2 Tbsps freshly chopped parsley
Preparation steps
1.
Peel the carrots, onions and garlic. Thinly slice the carrots, cut the onion into wedges and finely chop the garlic. Rinse the celery, remove the strings and thinly slice.

Rinse the meat, pat dry and rub the chops with salt, pepper and caraway. In a pan heat the butter and brown the meat on both sides.

Add the carrot, onion, celery and garlic to the pan and sauté briefly. Add the beer, cover and simmer over medium heat until the pork is cooked through, about 20 minutes.

Uncover, stir in the parsley and season the sauce with salt and pepper. Remove the chops, keep warm and let the sauce simmer slightly. Pour the sauce over the pork and serve.
