- For the pork
- 6 Tbsps sweet paprika
- 3 Tbsps powdered sugar
- 1 Tbsp mustard powder
- 3 Tbsps fine salt
- 3 Tbsps Chili powder
- 3 Tbsps Cumin
- 2 Tbsps ground Black pepper
- 3 Tbsps Garlic granules
- 2 Tbsps cayenne pepper
- 4 ½ lbs Pork shoulder (cut into pieces)
- For the wraps
- 1 Avocado
- 2 Tbsps Lime juice
- 4 Tortillas
- 2 Lettuce (roughly chopped)
- 1 red chili pepper (chopped)
- 1 handful fresh cilantro (torn into small pieces)
- Lime wedge (to serve)
Preparation steps

Mix the seasoning ingredients together and rub all over the pork. Wrap in cling film and leave to marinate overnight in the refrigerator.

Line a large kettle barbecue with two rows of briquettes in circles and scatter soaked wood chips on top. Place 8-12 glowing coals in the barbecue. Measure the temperature in the barbecue and regulate it to around 230°F using the air vents.

Place a flame-proof bowl of water on the centre of the barbecue grate. Put the meat in the barbecue and close it.

Using a meat thermometer, regularly check the temperature of the meat. It is cooked when the core temperature reaches around 200°F, which will take 10-18 hours.

Remove the meat from the barbecue, wrap in foil and leave to rest.
6.
For the wraps, cut the avocado into wedges and drizzle immediately with the lime juice.
7.
Heat the tortillas in a pan without fat or oil for 1-2 minutes. Top the tortillas with the lettuce, avocado, chillies, coriander and meat, and serve with wedges of lime.
