1 shallot
250 grams Bologna sausage
1 bunch Chives
2 Tbsps clarified butter
salt

100 milliliters Whipped cream
2 Tbsps scallions

Preparation steps

1.

Peel the potatoes and cook for about 30 minutes in boiling salted water, drain and let cool, then chop into small pieces.

Chop the shallot, remove the skin from the sausage and dice finely.

Cook the shallot in hot clarified butter until translucent. Add the sausage and potatoes and briefly cook. Stir in half of the chives and season with salt, pepper and nutmeg.

4.

Whisk the eggs and cream, pour into the pan, cover and cook over medium heat. As soon as the egg is almost completely set (about 2-3 minutes), slide onto a flat plate and flip over, back into the pan. Cook for another 1-2 minutes.

5.

Sprinkle with chives and serve cut into 4 slices.
