- 2 potatoes (about 7 ounces)
- 1 Apple
- 2 tsps vegetable oil (such as sunflower oil)
- 3 eggs
- 2 Tbsps mineral water (carbonated)
- salt
- peppers
- 2 slices Bacon

Preparation steps
Peel potatoes and cut into thin slices.
Rinse apples, wipe dry, quarter, core and dice finely.
Heat oil in a non-stick pan. Add potatoes and cook over medium heat, turning frequently for about 10 minutes. After 5 minutes, add the diced apple.
Meanwhile, whisk together eggs and mineral water in a small bowl. Season with salt and pepper.
Pour the egg mixture into the pan and allow to cook until firm.
Cook bacon until crispy in another pan over medium heat. Drain on paper towels.Serve bacon on the omelet.
