Ingredients

For the dough
½ cube Yeast (21 grams)
1 pinch sugar
350 grams Pastry flour
4 Tbsps olive oil
1 tsp salt
For the topping
200 grams cream cheese
100 grams Crème fraiche
200 grams waxy potatoes
salt
2 Apple
100 grams pickled paprika
freshly ground peppers
100 grams grated Cheese (i.e Emmental)
4 sprigs thyme

Preparation steps

For the dough, dissolve the yeast in 175 ml (approximately 2/3 cup) of lukewarm water with the sugar. Knead the flour, with the yeast, olive oil, and salt into a smooth dough. Cover and let rise for about 1 hour in a warm place.

Preheat the oven to 240°C (approximately 425°F). Place a baking tray in the oven.

Separate the dough into 4 balls and roll out on a lightly floured surface into ovals. Place on parchment paper.

For the topping, mix the cream cheese with the crème fraiîche and spread on the pizzas. Leave and an edge of about 1 cm (approximately 1/3 inch). Peel the potatoes and cut into thin slices. Blanch in salted water for 3-4 minutes until they are almost done. Drain. Rinse the apples, cut into quarter and remove the core. Cut the quarters into slices. Drain the peppers well and spread the peppers, potatoes, and apple slices on the pizzas. Season with salt and pepper. Sprinkle with the cheese and thyme.

Place the parchment paper on the heated baking tray. Bake in a preheated oven until golden brown, about 10-15 minutes. Serve immediately.
