600 grams floury potatoes
1 egg
1 Tbsp Potato starch (according to package recommendation)
salt
freshly ground peppers
Nutmeg
4 Tbsps vegetable oil
200 grams Smoked salmon
150 grams Sour cream
1 splash lemon juice
Dill (for garnish)

Preparation steps

1.

Peel potatoes and grate. Place in a cheesecloth and squeeze out excess water. In a bowl, mix potato with egg and starch. Season to taste with salt, pepper and nutmeg.

In a heavy saucepan, heat oil and fry potato mixture in portions. Place mounds evenly in pan, each about a tablespoon and fry about 2 minutes until crispy. Turn and fry for about 2 minutes until done. If desired, keep warm in oven at 80°C (approximately 175°F).

Arrange on plate and top with strips of salmon. Whisk together sour cream, lemon juice and salt. Top each canape with 1 teaspooon. Garnish with dill and serve.
