2 Tbsps butter
500 grams cooked potatoes
500 grams starchy potatoes
125 milliliters lukewarm milk
4 Tbsps cornstarch
salt
freshly ground peppers
freshly grated Nutmeg
Chives (for garnishing)

Preparation steps

Cut bread into about 1 cm (approximately 1/2 inch) cubes. Heat butter in a pan and cook bread cubes until golden. Drain on paper towels.

Peel cooked potatoes  and press through the ricer. Peel, rinse and finely grate raw potatoes. squeeze well in a kitchen towel and mix with milk, cornstarch and cooked potatoes. Season with salt, pepper and nutmeg. Divide into 8-12 portions and shape into patties. Place 1 crouton in the middle of each pattie and shape into round dumplings with a crouton inside.

Bring salted water to a boil and add dumplings. Bring to a boil, reduce heat and simmer for about 20 minutes. Remove with a slotted spoon, drain and serve garnished with chives.
