Ingredients
- For the potato patties
- 500 grams starchy potatoes
- 2 egg yolks
- 150 grams Pastry flour
- 20 grams butter
- salt
- Nutmeg (freshly grated)
- 2 Tbsps chopped cilantro
- 2 Tbsps sunflower oil
- 20 grams butter
- For the dipping sauce
- 500 grams Yogurt (0.1% fat)
- juice of Limes
- 1 pinch sugar
- salt
- freshly ground pepper
- 4 Tbsps chopped cilantro
- For garnish
- Coriander
- organic Lime wedge
Preparation steps
For the potato patties, rinse potatoes and cook in boiling, salted water until tender for about 20 minutes. Drain potatoes and peel. On a work surface, press potatoes through potato ricer and shape into a circle with a well in the middle. Add flour, egg yolks, butter, coriander, salt and nutmeg in the middle and mix into a smooth dough.
Divide potato dough into balls, each about 20 grams (approximately 1 ounce) and press flat into patties. In a pan, heat oil and fry potato patties on both sides until crispy and golden. Remove from pan and drain on paper towels and keep warm.
For the dipping sauce, mix yogurt, lime juice and cilantro until smooth. Season with sugar, salt and pepper, to taste.
Pour dip into a serving bowl and garnish with cilantro. To serve, place potato patties on a warm plate and garnish with lime wedges and cilantro.
