800 milliliters Vegetable broth
1 handful parsley
2 bay leaves

Preparation steps

Rinse the leeks and cut into small pieces. Peel and coarsely chop the potatoes. Bring the potatoes, leeks and vegetable broth to a boil. Rinse the parsley and add to the pot. Add the bay leaf. Season with salt and pepper. Simmer over medium heat for about 20 minutes, until the potatoes are soft.

Slice the sausage and add to the soup. Simmer over low heat for about 5 minutes. Remove the parsley and bay leaf. Serve garnished with fresh oregano.
