Preparation steps

1.

Rinse and cut the scallion into small pieces. Peel and dice the potatoes. Simmer the scallion and potatoes in the broth for about 15 minutes. Remove from the heat and puree. Season with salt and pepper.

Saute the sauerkraut in hot oil. Cut the prosciutto into strips. Mix the sauerkraut, prosciutto, herbs, yogurt and season with salt and pepper. Serve with the potato soup.
