- 7 ozs Greek yogurt
- 1 Tbsp Tomato paste
- A few drops Tabasco sauce
- ½ organic lemon (peel and juice)
- salt
- peppers
- 1 head Radicchio
- 2 Avocados
- 12 Prawn (precooked; peeled)
- ½ bunch Chives
- 2 ½ ozs cilantro (1 handful)
Preparation steps
For the cocktail dressing, mix yogurt with tomato paste, Tabasco and lemon juice and season with salt and pepper.
Clean radicchio, wash, spin dry and pluck smaller as needed. Halve and pit avocados, remove flesh from skins, cut into wedges and arrange on a large platter with shrimp and radicchio.
Wash herbs, shake dry and chop. Sprinkle salad with chives, cilantro and lemon zest and serve with dressing.
