3 sprigs thyme
10 ozs Long grain rice
42 ozs milk
6 Tbsps Agave syrup
2 Peaches
1 tsp Coconut oil
3 ozs Greek yogurt

Preparation steps

1.

Cut vanilla bean in half lengthwise and scrape out vanilla pulp with a knife. Wash thyme and shake dry.

2.

Bring vanilla pulp to a boil with rice, milk, 4 tablespoons agave syrup, 2 stalks thyme in a saucepan and simmer over medium heat for about 25 minutes. Stir occasionally.

3.

Wash peaches, rub dry, cut in half, and remove the stone. Cut peaches into thin slices. Heat coconut oil in a frying pan and sauté peach slices for 3 minutes over medium heat.

4.

Just before the end of cooking rice pudding, remove thyme stems and stir in yogurt. Divide protein rice pudding among bowls, and serve with roasted peaches, remaining agave syrup, and thyme.
