4 ozs mixed leaf lettuce (e.g. radicchio, iceberg lettuce, frisée, lamb's lettuce)
1 bunch Radish
2 Tbsps White vinegar
2 Tbsps olive oil
peppers
8 slices Whole Wheat Bread

Preparation steps

1.

Wash the asparagus, cut off the woody ends and peel the lower third of the spears. Halve asparagus lengthwise and cut into pieces. Cook asparagus in boiling salted water for 5 minutes. Then drain and quench.

Hard-boil eggs in boiling water over medium heat for 8-10 minutes, rinse with cold water and cool.

Clean the lettuce mix, wash, spin dry and shred. Clean, wash and slice the radishes.

4.

For the dressing, whisk together vinegar, oil, salt and pepper. Divide lettuce with radishes and asparagus pieces on 4 plates. Peel and quarter eggs, top lettuce with them and drizzle with dressing. Serve with bread.
