1 can Tomatoes (about 400 grams)
½ tsp dried thyme

1 can Kidney beans (400 grams)
4 Tbsps beaten egg whites

Preparation steps

1.

Peel the carrot and trim. Peel the onions and garlic. Finely dice everything.

2.

Heat 1 tablespoon olive oil in a saucepan. Sauté the carrots, garlic and half of the onions about 5 minutes. Pour in the tomatoes with the juice and mash with a potato masher. Stir in the thyme and season with salt and pepper. Simmer uncovered about 20 minutes.

3.

Drain the beans in a colander, rinse with cold water, drain and mash with a fork. Mix with the remaining onion and the egg and season with salt and pepper.

4.

Heat the remaining oil in a pan. Shape the bean mixture into patties and brown on both sides. Serve the bean cakes with the tomato sauce and serve immediately.
